Keto pork with creamy parmesan sauce




Meat and two veg doesn't have to be bland. Get stuck into this tender pork loin, with juicy roasted tomatoes and a creamy, cheesy sauce.

 

9 Ingredients

  • 2 bunches broccolini, trimmed
  • 260g truss tomatoes
  • 2 tbsp olive oil
  • 4 pork loin chops
  • 25g butter
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 300mls light cooking cream
  • 1/2 cup finely grated parmesan cheese

4 Method Steps

Step 1

Preheat oven to 220C/200C fan-forced. Line a baking tray with baking paper. Place broccolini and tomatoes in tray. Drizzle with half the oil. Season. Bake for 10-12 minutes or until golden and tender.


Step 2

Meanwhile, heat remaining oil in a large frying pan over medium-high heat. Cook pork, turning, for 7-8 minutes or until golden and just cooked through. Transfer to a plate. Cover loosely with foil to rest for 5 minutes.

 

Step 3

Meanwhile, return pan to a medium-high heat. Add butter and onion. Cook, stirring, for 2-3 minutes or until onion softens. Add garlic. Cook, stirring, for 1 minute or until fragrant. Add cream. Boil for 2-3 minutes or until thickened. Add cheese. Cook until melted and smooth. Season.

 

Step 4

Serve pork with vegetables and creamy parmesan sauce.
